Whenever I go to Haneda Airport, there’s one thing I must eat. Whether I’m heading overseas or returning from abroad, I crave this quintessential Japanese breakfast. There’s a place at Haneda Airport where you can enjoy such a meal. Today, I’d like to introduce you to SAKEZEN (鮭膳)at Hitoshinaya.

Traditional Japanese Set Meal

In Japan, there is a concept called “ichiju-sansai,(一汁三菜)” which means a meal that includes one soup and three side dishes along with rice as the main dish. At Hitoshinaya, they serve a menu called “Salmon Zen,” which perfectly embodies the Japanese breakfast, featuring one soup, three side dishes, along with salad and pickles.

The delicious Salmon Zen (鮭膳)

The rice is cooked in a traditional pot, the salmon is grilled to a tender perfection, and the omelet is sweetly seasoned in the Kanto style. The vegetable side dish and tofu are quintessentially Japanese. When you’re seated, you’re first served not tea, but a delicious dashi broth. Be sure to savor this broth—it’s delightful. While the Salmon Zen is highly recommended, they also offer Shirogayu Zen, which includes rice porridge and eight side dishes, and Chazuke Zen, which includes rice soaked in tea with nine side dishes.

Convenient Self-Service Payment

As expected from Haneda Airport, the payment is made through self-service registers. You can pay with cash or credit card. Simply take the receipt placed in front of your counter, scan the barcode at the self-service register, and make your payment.
